You won't miss the sugar in this melt-in-your-mouth banana bread. A great way to use up those ripe bananas. Bonus: the bread freezes very well.

2 teaspoons baking powder
1 3/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup sugar substitute
1/4 cup melted diet margarine or butter
1 egg, beaten
1/2 teaspoon vanilla or almond extract
1/2 cup chopped nuts (optional)
3 small bananas, mashed
Preheat the oven to 375 degrees F. Grease a 9x3 loaf pan.
Sift together the baking powder, flour, salt, baking soda, and sugar substitute. Add the melted butter, egg, extract, and nuts. Mix well.
Stir in the mashed bananas and then pour the batter into the prepared loaf pan.
Bake at 375 degrees F for 1 hour or until the bread tests done in the middle.
Remove from the oven and let cool in the pan on a wire rack.
Store the bread in an airtight container for up to 5 days or wrap well and freeze for up to 2 months.
