What is the secret to the almost creamy texture of this banana bread? Miracle Whip! If desired, stir 1/2 cup of chopped nuts into the batter.
1 cup Miracle Whip or mayonnaise
1 cup mashed ripe banana
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
2 teaspoons baking soda
Preheat the oven to 350 degrees F. Grease a loaf pan.
Combine the Miracle Whip and banana in a large bowl and mix until smooth. In another bowl, mix together the flour, sugar, brown sugar, and baking soda.
Stir the flour mixture into the banana mixture, mixing until just blended.
Transfer the batter to the prepared loaf pan. Place the pan in the oven and bake at 350 degrees F for 55-65 minutes. Remove the pan from the oven and let the banana bread cool in the pan for 10 minutes. Remove the bread from the pan and let cool completely on a wire rack.
Store the Miracle Whip banana bread in an airtight container. Banana bread also freezes well.

I tried this recipe but modified it with by replacing white sugar with 1/2 c. brown sugar, 1/4 c. splenda. Also added 1 tsp vanilla extract, 2 tsp cinnamon, 1 c. walnuts. Ingredients filled up 1 tray of 6-3 inch muffins at 350 degrees for 30 minutes.
