ingredients
1/2 cup butter or margarine, softened at room temperature
1/4 cup sour cream
1 cup firmly packed light brown sugar
1 teaspoon vanilla extract
2 eggs
1 cup mashed ripe bananas
2 cups self-rising flour
1/2 cup chopped pecans
directions
Preheat oven to 350 degrees F. Grease and lightly flour three miniature loaf pans (about 5 1/2-by-2 1/2-by-2 inches each).
Cream together the butter, sour cream and brown sugar. Add vanilla, eggs and bananas. Beat until well mixed. Gradually add the flour, beating only until mixed. Stir in pecans.
Fill loaf pans about 2/3 full. Bake for about 30 to 35 minutes or until a toothpick comes out clean when inserted into center of loaves. Turn out of pan immediately onto rack to cool.
Great served slightly warm with butter, or sandwich two slices together with cream cheese (cheesecake-flavored cream cheese is wonderful).
NOTE: If you choose to bake this in an 8-by-5-by-3 inch loaf pan, bake it for about 45 to 50 minutes or until a toothpick comes out clean when inserted into center of loaf.
