This Italian cheese is so versatile that it can be used in both sweet and savory recipes from cheesecakes to lasagnas.

Warm, freshly baked soft pretzels are always delightful, but whole wheat flour adds a little extra nutrition and a nuttier flavor in this recipe.
3 cups whole wheat flour, or as needed
1 envelope (.25 ounce size) quick-rise yeast
1 teaspoon salt
1 1/3 cup warm water (125 to 130 degrees F)
3 tablespoons vegetable oil
1 tablespoon honey
1 egg white, beaten
coarse salt, sesame seeds, everything bagel topping, poppy seeds, etc
Preheat the oven to 400 degrees F. Grease a baking sheet.
Combine 2 cups flour, the yeast, and salt in a large bowl. Stir in the warm water, oil, and honey. Mix until smooth. Stir in enough of the remaining flour to make a soft dough.
Lightly flour a work surface. Turn the dough out onto the work surface and knead for 5 minutes or until smooth and elastic (if the dough is too sticky add additional flour in 1 tablespoon increments).
Cover the dough lightly with a towel and let rest for 10 minutes.
Knead the dough for one minute then divide it into 12 equal sized balls. Roll each ball into a rope that is 18-inches long. Twist each rope into a pretzel shape and place on the greased baking sheet.
Brush each pretzel with the egg white and sprinkle with salt or other toppings.
Place the baking sheet in the oven and bake at 400 degrees F for 15 minutes or until golden brown. Remove from the oven and immediately transfer the pretzels to a cooling rack.
Serve the whole wheat soft pretzels warm with mustard or cheese sauce for dipping.

I made exactly as the recipe stated. They are very easy. However, I would call this recipe Bread Sticks, not soft pretzels. The reason is they taste like good whole wheat rolls or breadsticks. I will make again in the shape of breadsticks and no pretzel salt. Just seeds. They go great with dinner. It took 1-12 hours to complete, using my bread machine only to do the kneading.

I just made these with my four year-old and loved it. We only let the dough rise 10 minutes and they turned out perfectly. We made cinnamon-sugar, sesame/salt, and plain pretzels... all are delicious!

Finally a decent recipe for making whole wheat pretzels! I've tried others that have fallen flat (literally). Absolutely wonderful recipe!! Thank you for sharing it!

These turned out perfect for me and I love that they have a healthier aspect with the whole wheat flour and honey instead of sugar.

I gave this recipe a 4 because the recipe is good for quick, healthy snack for a family activity. The pretzels however were a bit disappointing flavor wise. Allow the dough to rise for at least an hour after you are done kneading the dough and again after you twist them onto a cookie sheet for about 20 min, This will develop more pretzel like, yeasty flavor. It wasn't bad though, my son and I enjoyed making these...
