It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Butter Finger Dessert Bars

ingredients
1 cup butter or margarine at room temperature
2 cups flour
1/4 teaspoon salt
2 teaspoons sugar
4 eggs, well beaten
2 cups pecans
2 cups brown sugar
1/4 cup flour
2 teaspoons baking powder
1 cup coconut
Icing
3 cups powdered sugar
6 tablespoons butter or margarine
3 tablespoons milk or cream
2 teaspoons vanilla extract
directions
Mix butter or margarine, 2 cups flour, salt and sugar until crumbly. Press into a 9" x 13" pan. Bake in a preheated oven for 10-15 minutes at 375 degrees F.
Mix eggs, pecans, brown sugar, 1/4 cup flour, baking powder and coconut together. Spread over cooked pastry. Bake for 15 minutes at 375 degrees F. Cool before icing.
For Icing: Combine all ingredients and mix well. Frost and cut into 1" x 1 1/2" bars.
