Tofu Spaghetti Balls - CDKitchen.com

ingredients

3/4 pound firm tofu, mashed
1/2 cup fine breadcrumbs
1 1/2 tablespoon creamy peanut butter
3 tablespoons soy sauce
1/4 cup parsley, minced
1 small onion, minced
1/2 teaspoon dry mustard
1/2 teaspoon black pepper
1 jar spaghetti sauce
4 cups cooked spaghetti

directions

Work mixture of all ingredients together with your hands until thoroughly blended. Roll into 1-1/2 inch balls.

Roll balls in flour and fry in hot oil until browned all over (Treat them more gently than you would hamburger meatballs as they do not hold together quite as well).

Drop into simmering spaghetti sauce and cook for 5-10 minutes until heated through. Serve over spaghetti.
