4 tablespoons olive oil
2 pounds beef shoulder, cubed
2 large onions, diced
2 large carrots, peeled and diced
4 potatoes, diced
1 tablespoon mixed dried herbs like thyme, rosemary, and marjoram
1/2 bottle dry red wine
1 can (15 ounce size) diced or stewed tomatoes, undrained
2 teaspoons paprika
1 teaspoon garlic powder
salt and pepper, to taste
Heat the oil in a Dutch oven over medium heat. Add the beef and cook, stirring, until browned.
Add the onions and cook for 3-5 minutes or until the onions begin to soften. Add the carrots, potatoes, and herbs. Mix well.
Stir in the wine, tomatoes, paprika, and garlic powder.
Reduce the heat to a simmer (medium-low), cover, and cook for 2-3 hours or until the meat and vegetables are tender. Add additional liquid if needed. Season to taste with salt and pepper.
Serve the goulash with dumplings or noodles if desired.
