It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

If you're in the mood for something hearty and satisfying, this beef and mushroom goulash has got you covered. With a handful of ingredients, you can create a dish that's both comforting and packed with flavor.

3 tablespoons oil
2 pounds stew beef, cubed
1 cup sliced, fresh mushrooms
1 small onion, chopped
1 can (10.75 ounce size) tomato soup
1/4 cup water
1 bay leaf
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon paprika
1/4 pint dairy sour cream
Heat the oil in a skillet over medium-high heat. Add the beef and cook, stirring frequently, until browned. Transfer the beef to the crock pot with a slotted spoon.
Add the mushrooms and onion to the skillet. Cook, stirring frequently, until the onion is soft, about 2 minutes.
Transfer the mushrooms and onions to the crock pot.
Stir the tomato soup, water, bay leaf, salt, pepper, and paprika into the crock pot. Cover the crock pot and cook on low heat for 4 hours or until the beef is tender.
Remove the bay leaf and stir in the sour cream. Serve immediately over noodles or rice.

Super easy! I toss the beef cubes in some flour before browning. I also use tomato sauce instead of soup because I find the soup to be too sweet
