4 medium cucumbers, peeled and thinly sliced
1 medium onion, sliced
2 teaspoons salt
1/2 cup heavy cream
2 tablespoons vinegar
1/4 teaspoon salt
1/8 teaspoon black pepper

directions

Combine the cucumbers, onion, and salt. Mix well then let stand at room temperature for one hour. Drain off excess liquid after the cucumbers have sat (press them down slightly to remove excess liquid).

Stir the cream, vinegar, salt, and pepper into the cucumber mixture. Mix well. Cover the bowl and place the cucumbers in the refrigerator for several hours before serving.

    My mother-in-law gave me this recipe 40 years ago. However, she gave it to me with the same ingredients, but with no measurements. I’ve made it many times over the years with different results each time. Sometimes too salty, and sometimes not salty enough. Have been searching the internet for years with no luck, and most of the recipies call for sour cream. So happy I found this. Thanks for sharing.

    I grew up w my mom making this w sour cream and never liked it. Now that I'm on keto, thought I'd give it a try and found this one w no sugar. Was skeptical given past experience and no sugar....but WOW. This was so good that I seriously contemplated licking the bowl. I did add a little fresh dill from my garden, but even so. No sugar needed and amazingly delicious.

    Why salt twice? Isn't that supposed to be two teaspoons of sugar? My mom always added sugar.

    • The first measure is used to draw the moisture out of the cucumbers. The second is to actually season the dish.

    Let the salted cucumbers and onions sit in a colander over a bowl, it makes them easier to drain. Shake or stir them occasionally while they sit. I also make the dressing while the cucumbers are draining and chill it until ready to mix all together.
