Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

This tasty salad combines the refreshing flavor of fresh cucumbers with a tangy cream sauce. Bonus: cucumbers are a rich source of vitamins and minerals like potassium and magnesium.
4 medium cucumbers, peeled and thinly sliced
1 medium onion, sliced
2 teaspoons salt
1/2 cup heavy cream
2 tablespoons vinegar
1/4 teaspoon salt
1/8 teaspoon black pepper
Combine the cucumbers, onion, and salt. Mix well then let stand at room temperature for one hour. Drain off excess liquid after the cucumbers have sat (press them down slightly to remove excess liquid).
Stir the cream, vinegar, salt, and pepper into the cucumber mixture. Mix well. Cover the bowl and place the cucumbers in the refrigerator for several hours before serving.
Use a mandoline for uniform cucumber slices.
Salting and allowing the cucumbers to sit not only flavors them but also helps draw out excess water, which prevents your salad from becoming watery.
Try adding fresh herbs like dill or mint for extra flavor.
For a lower-calorie version, Greek yogurt can be used instead of heavy cream. It has a similar creamy texture with a tangy flavor.
If you find the flavor too tangy, a small amount of sugar or honey can balance the acidity.
You can add other vegetables like radishes or cherry tomatoes for a little variety.
Serve this salad with grilled meats or as a refreshing side dish.
Yes, you can substitute with lower-fat cream options, though the sauce may be less rich.
Peeling is not mandatory. If you prefer a bit more texture, you can leave the skin on.
Yes, you can use apple cider vinegar or white wine vinegar for a slightly different flavor.
It’s best consumed within a day or two, as the cucumbers will continue to release water and may become soggy.

Delicious recipes for red velvet cakes, cupcakes, and cheesecakes.
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

My family has been making this recipe for generations. It is excellent over a baked potato. The leftovers are even better the next day.

My mother-in-law gave me this recipe 40 years ago. However, she gave it to me with the same ingredients, but with no measurements. Iâve made it many times over the years with different results each time. Sometimes too salty, and sometimes not salty enough. Have been searching the internet for years with no luck, and most of the recipies call for sour cream. So happy I found this. Thanks for sharing.

I grew up w my mom making this w sour cream and never liked it. Now that I'm on keto, thought I'd give it a try and found this one w no sugar. Was skeptical given past experience and no sugar....but WOW. This was so good that I seriously contemplated licking the bowl. I did add a little fresh dill from my garden, but even so. No sugar needed and amazingly delicious.
Why salt twice? Isn't that supposed to be two teaspoons of sugar? My mom always added sugar.
The first measure is used to draw the moisture out of the cucumbers. The second is to actually season the dish.

This is the way to make them! Not with Mayo or sour cream! I love these...remind me of the old days growing up in Glencoe!

Let the salted cucumbers and onions sit in a colander over a bowl, it makes them easier to drain. Shake or stir them occasionally while they sit. I also make the dressing while the cucumbers are draining and chill it until ready to mix all together.
