Chilled Cucumber Salad

Summer dishes need a refreshing ingredient like cucumber to go with tacos or grilled meat. A super simple salad that'll be welcomed with just about any meal.

ingredients

2 cups thinly-sliced cucumbers
1/2 teaspoon salt
1 cup thinly-sliced onions
1/4 cup white vinegar
1/4 cup water
1 tablespoon sugar
1/2 teaspoon dried dill weed
1/4 teaspoon black pepper
1 dash cayenne pepper

directions

Place the cucumbers and onions in a non-reactive bowl and season with the salt.

In another bowl, whisk together the vinegar, water, sugar, dill, black pepper, and cayenne. Mix well then pour over the cucumbers. Toss gently to coat the cucumbers and onions in the dressing.

Cover the bowl and chill the salad for 30-90 minutes. Stir before serving.

    I also added in 6 thinly sliced baby carrots and fresh 3 medium sized red radishes. Note add the radish after the rest of the has been getting happy for about 20 minutes. Turned out great.

    Quick, easy and delicious. Served this with grilled lamb. Use 2 Tbl. water only, as the cukes give off a lot of liquid. I added feta cheese to it and did not have dill so added some fresh chopped mint from my garden. We all loved it, even my 10 year old. This is definitely something I will bring to future summer barbecues.

    This is the best recipe for cucumbers that I have ever tasted. I made one change of cider vinegar instead of regular vinegar. I will never make cucumber salad any other way.

    I love this recipe. My Grandmother made one similar. Brings me back to a million summer b-bq's. I also add 3-4 ice cubes. It gives it that extra crisp kick and makes it even more refreshing. Plus, I've founf the the marinade is more powerful/flavorful the cooler the salad is.

    It was great! A big hit! I agree that the recipe ends up with too much liquid in the end. I strained the excess before serving and the flavor was still great. I would still use equal amounts water and vinegar though to avoid having the vinegar be too overpowering. I would just use less of each. Thanks!

    Quick/easy to make and easy to mutiply to serve more people. One caveat: I used less than 1/2 the water the recipe called for and next time I think I would use even less--the recipe really doesn't need it. Perfect accompaniment to spicy and/or Asian food.
