A refreshing and simple cucumber salad. This dish can be made in less than 15 minutes and goes well with almost any meal.


1/2 cup sour cream, well chilled
1 teaspoon dill weed
1 tablespoon cider vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon white pepper
2 large cucumbers, chilled
1/2 small yellow or white onion
Stir together the sour cream, dill, vinegar, sugar, salt, and white pepper. Mix well then place in the refrigerator while you prepare the cucumbers.
Peel the cucumbers. Cut them in half lengthwise and scoop out the seeds using a spoon. Cut the cucumber crosswise into thin slices and place in a bowl.
Thinly slice the onion and add to the cucumbers. Gently fold the sour cream mixture into the cucumbers and onions and serve immediately.
The salad can be covered and refrigerated for up to 30 minutes before serving. If refrigerated longer than 30 minutes it may become watery.

I reduced the amount of vinegar but otherwise very good.

My mom used to make this recipe every holiday. It is so good. I recommend for everyone to try it.
