Lentil Rice Casserole

ingredients
3 cups chicken broth
3/4 cup lentils, uncooked
1/2 cup brown rice, uncooked
3/4 cup chopped fresh onion
1/2 teaspoon sweet basil
1/4 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon garlic powder
1/2 cup shredded cheddar cheese
directions
Preheat oven to 300 degrees F.
Combine the broth, lentils, rice, onion, basil, oregano, thyme, and garlic powder in a 1 1/2-quart baking dish. Cover the dish with aluminum foil.
Place the dish in the oven and bake at 300 degrees F for 1 1/4 hours. During the last 20 minutes, remove the foil and sprinkle the mixture with the shredded cheese. Return to the oven and bake 20 minutes longer or until the cheese is melted and the rice and lentils are tender.
Serve hot.

I was looking for a way to eat lentils more often and really enjoyed this recipe. It smelled great while cooking. I probably used more cheese as I was using a very soft mild cheddar that clumped. Got my family to eat it and say they liked it, after first turning up their noses at the idea of a vegetarian casserole. I will make it again!
