Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
Lentil Mushroom Curry

ingredients
1 cup brown lentils
3 cups water
3 medium onions, chopped
1 pound mushrooms, chopped
1 teaspoon salt
1 tablespoon curry powder (medium or hot, depending on your taste)
2 tablespoons olive oil
Topping
1 cup yogurt
chopped scallions
directions
Wash lentils. Put into water and boil for a few minutes. On low heat, cook 40 minutes. Watch. Most water will be absorbed. Drain extra water. Add salt. Set aside.
Preheat oven to 350 degrees F.
In a separate pan, saute onions in oil, and then add mushrooms, curry powder and cook for 5 minutes.
Combine with the cooked lentils and put into a baking dish. Bake, covered, for 25 minutes. Serve with yogurt and scallions.
