Spicy Lentil Dal

ingredients
1 tablespoon olive oil
1 cup onion, diced
1 tablespoon fresh ginger, minced
1 teaspoon cumin seeds
1 teaspoon turmeric
1/2 teaspoon crushed red pepper
4 cloves garlic, minced
2 cups cauliflower florets
1 can (14.5 ounce size) diced tomatoes, drained, with juice reserved
2 1/4 cups water
1 cup dried lentils
2 tablespoons lime juice
1 tablespoon fresh cilantro, minced
3/4 teaspoon salt
directions
Heat olive oil in a large pan. Add onion, ginger, cumin seeds, turmeric, crushed red pepper and garlic. Saute for 2 minutes.
Add cauliflower and diced tomatoes (drained, reserving liquid) to pan and stir. Saute for 1 minute.
Add tomato juice, water and lentils. Bring to a boil, stirring well. Reduce heat, cover, and simmer for 35 minutes or until lentils are tender.
Remove from heat and stir in lime juice, cilantro and salt. Serve over basmati rice.
