Slow Cooker Curry-Spiced Lentils & Spinach

ingredients
1 1/2 teaspoon curry powder
1/2 teaspoon cumin
1 teaspoon ginger
1/4 teaspoon turmeric
1/4 teaspoon cayenne pepper
1 medium onion, chopped
2 cloves garlic, crushed, minced
1 cup lentils, rinsed
1/4 cup converted rice
1 package (10 ounce size) chopped spinach, partially thawed and broken up
2 cups vegetable broth (or chicken broth if desired)
salt, to taste
chopped tomato and mint for garnish, if desired
directions
Combine first 11 ingredients in the crock pot. Cover and cook on LOW for about 6 hours, or until rice and lentils are tender but not mushy.
Add salt to taste; serve garnished with chopped tomato and mint if desired. May be doubled.

My husband loved this dish and was even asked for the recipe by someone at his office. I added some mango chutney on top when serving - added a bit of zing. Very easy to make!

Instead of the converted rice, I used brown rice, cooked separately. Then just stirred it in when the main dish was done. I'm not a very good cook. But, this dish is wonderful and easy.

Oh man oh man, this is absolutely delicious...what a great combination of spices and flavors, and so easy to make...LOVE IT!!!
