Crisp-cooked chickpeas with a hint of cinnamon flavor
1 tablespoon olive oil
1 cinnamon stick, broken in half
1 pound canned chickpeas, rinsed, drained and patted dry
2 teaspoons fresh lemon juice, or to taste
1/4 cup fresh cilantro, chopped
Heat oil in a heavy nonstick skillet over medium high heat. Saute cinnamon sticks 1 to 2 minutes until fragrant.
Stir in chickpeas and saute about 8 minutes, stirring frequently, until browned and crisp.
Transfer chickpeas to a bowl. Add remaining ingredients and salt and pepper to taste. Toss.

I love cinnamon in savory foods so I was excited to try this. While there was a cinnamon aroma, there was no detectable cinnamon flavor that I could taste. Also, my chickpeas never got very crisp - even cooking them for nearly 15 minutes. This isn't a bad dish, it just wasn't as exciting as I'd hoped it would be. I ended up sprinkling some ground cinnamon in to boost the flavor.
