Make-Ahead Fluffy Mashed Potato Casserole With Crisp Onion Topping

ingredients

2 cups mashed potatoes
8 ounces cream cheese, softened
1 small onion, finely chopped
2 eggs, lightly beaten
2 tablespoons flour
salt and pepper
1 can (2.8 ounce size) French fried onions, for topping

directions

In large bowl, combine potatoes, cream cheese, onion, eggs and flour. With a mixer on medium speed, mix until blended. Increase the speed to high and beat the potato mixture until it's light and fluffy. Season with salt and pepper and mix well.

Cover and refrigerate for 8 hours or up to 2 days.

Later: Remove potato mixture from refrigerator. Let it sit for up to 1 hour. Preheat oven to 325 degrees F.

Put potato mixture in a greased 3 quart casserole dish. Spread French fried onions on top of the potatoes mixture and bake for 30 to 40 minutes, until bubbly.

    I only used one egg and this turned out well.

    The cooking time or temp seemed off on this recipe. 30 minutes at 300F still had the center quite runny and the potato mixture very pale. We turned the oven to 350 at that point and in another 20 minutes (or so) it was done. Aside from that it was extremely good and a great way to recycle leftover mashed potatoes.
