Canned Turkey and Rice Supper

ingredients
1 cup converted rice
1 tablespoon vegetable oil
1 cup sliced mushrooms
2 1/3 cups chicken broth
1 cup broccoli florets
1/4 cup red bell pepper, chopped
6 1/2 ounces canned turkey (can substitute canned chicken)
1/4 cup Parmesan cheese, grated
directions
In a 12-inch non-stick skillet, cook rice in oil until golden brown. Stir in mushrooms and chicken broth. Bring to a boil, reduce heat to low, stir, cover and cook for 20 minutes.
Stir in broccoli or zucchini, red pepper and turkey. Continue cooking for 5 minutes or until rice is tender. Remove from heat, sprinkle with cheese.
