1 head broccoli, lightly steamed till crisp/tender
5 cups cooked turkey or chicken, cut into bite size pieces
1 cup mayonnaise
1 can cream of mushroom soup
3 eggs
2 cups shredded cheddar or monterey jack cheese
salt and pepper, to taste
mushrooms or bacon (optional)

directions

Preheat oven to 350 degrees F and grease 9x13 glass dish.

Beat eggs, soup, mayo and shredded cheddar in bowl until well mixed.

Add cooked broccoli and turkey (and mushrooms and bacon if you desire).

Pour mixture into glass dish and bake about 45 minutes or until top is browned.

    I will be 69 in October and now that I am retired I have to watch my pennies.Loved this dish. Made it with broccoli red pepper and peas and tasted great. I am also overweight so not so fattening for me. Thank you. I will make this dish when my daughter arrives middle of September.

    The only change I made to this was more broccoli and less turkey, and 2/3 cheddar 1/3 smoked gouda. This is a fantastic recipe and a definite keeper!!

    I would like to know 1) If this casserole freezes well. 2) can I use frozen broccoli? I have a party in 13 days. recipe sounds simple & delicious; I love both turkey & broccoli.

    My husband and 1 year old said this was a keeper : ) I used ground turkey and chose to add both the mushrooms (canned) and bacon (hormel real crumble bacon <very easy & delicious>). Very tasty and satisfying all around meal. Just add a side of grain and you have all of your food groups : )
