The secret ingredient in these waffles is a package of carrot cake mix! Prepare them in your waffle maker as directed and top with sauteed apples.

1 box (15-18 ounce size) carrot cake mix, plus ingredients called for to prepare
1/2 cup chopped pecans or walnuts
1/3 cup water
2 granny smith apples, peeled, cored, and diced
2 tablespoons butter
2 teaspoons lemon juice
sour cream (optional)

directions

Combine the cake mix plus the ingredients called for on the package. Stir in the chopped nuts and water.

Melt the butter in a skillet over medium heat. Add the diced apple and stir to coat the apple in the butter. Cover the skillet and reduce the heat to low. Cook until the apples are soft but not mushy. They should retain their shape. Drizzle the lemon juice over the apples and mix well.

Preheat and grease the waffle iron as directed by the manufacturer.

Add the waffle batter by 1/4 cupfuls. Close the lid and cook the waffles until they are set and golden brown. Remove from the waffle iron and place on individual serving plates.

Top each waffle with some of the apples and a dollop of sour cream, if desired.

    What a great way to change up waffles!!! I've always found plain waffles to be boring and the only way to enjoy them is by loading them up with toppings. The flavor of these waffles is delicious and not boring at all! I didn't bother with the topping though, I was really most interested in the carrot cake flavor so I just put some butter and simple whipped cream on them. The waffle had a crispy crust and a soft center with the perfect amount of sweetness. The apples gave a bit of crunch and tartness that paired wonderfully with the cinnamon and nutmeg flavor of the carrot cake waffle. We used pecans in our batter and it was perfect. We topped it w/ a bit of whipped cream and a drizzle of maple syrup to finish it off! Divine! We will make this recipe for years to come!
