1 cup all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1/4 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 2 tablespoons sugar 2 eggs, separated 1 cup milk 1 cup mashed banana 6 tablespoons butter, melted
directions
In a small bowl, stir together the flour, baking powder, salt, cinnamon, nutmeg, and sugar.
In another bowl, whisk together the egg yolks and milk. While stirring, slowly add the flour mixture. Mix until just blended.
Fold the mashed banana and melted butter into the batter.
In another bowl, beat the egg whites until stiff peaks form. Fold the egg whites into the batter.
Heat the waffle maker as directed by the manufacturer. Add the waffle batter and cook as directed by the manufacturer. Remove the waffle and repeat with the remaining batter.
Serve the crisp banana waffles warm with any desired toppings.
Good dense waffles just how I like them. Banana flavor was about right.

A little heavy for a waffle but I am not sure that can be helped since bananas make batter heavy. Great flavor and I will make again...as waffles and as pancakes. They were the best banana pancakes I have ever made. Walnuts are a good addition to the recipe also.

Good dense waffles just how I like them. Banana flavor was about right.
