1 pound lean ground beef
1 medium onion, chopped
2 cups hot water
1 cup milk
1 package cheeseburger macaroni dinner mix
1/2 cup barbecue sauce
1/2 cup shredded cheddar cheese
1/2 pound bacon, crisp cooked and crumbled

directions

Cook beef and onion in 10-inch skillet over medium-high heat, stirring occasionally, until beef is brown; drain. Stir in hot water, milk, uncooked pasta (from dinner mix), sauce packet (from dinner mix) and barbecue sauce. Heat to boiling, stirring occasionally.

Reduce heat; cover and simmer 13 to 15 minutes, stirring occasionally, until pasta is tender. Remove from heat and uncover (sauce will thicken as it stands). Sprinkle with cheese and bacon. Sprinkle with additional chopped onion if desired.

    I used a package of the light velveeta shells and cheese dinner and this turned out very good. I used a little less bacon just to cut down on the fat a bit.

    Saw this recipe and it sounded so good but I had to make a few adjustments based on what I had on hand. First, didn't have the macaroni dinner so I used plain Kraft macaroni and cheese but I didn't quite prepare it the same way since I didn't have the same type of mac dinner mix. Rather I cooked it as directed on the box and then added milk to make it creamy. Second, no bbq sauce so I used tomato sauce with some cumin and chili powder for some flavor. Third, no cheddar cheese so I used mozzarella. I know it wasn't the same as the recipe but it was good! Next time I'll make sure I have all the ingredients!

    We call this "mom's too busy to cook" food. Any one of us (me, my husband, or 15 year old daughter) can throw this together when we need a simple but tasty meal and don't have time to cook much else. We just use a box of mac and cheese, not the cheeseburger macaroni dinner listed. This is also good with ground turkey.
