Asparagus Joe

ingredients
3 tablespoons olive oil
1/2 pound asparagus, cut diagonally
1 large onion, chopped
1 clove garlic, minced
1/2 pound mushrooms, sliced
1 pound ground beef, lean
1/2 teaspoon oregano
salt and pepper
1 dash hot pepper sauce
4 eggs, slightly beaten
Parmesan cheese, grated
directions
Heat 1 Tb. oil in a skillet or wok. Stir fry asparagus until almost crisp-tender. Remove and set aside.
Add remaining oil to skillet or wok. Saute onion, garlic and mushrooms until barely tender. Crumble in beef, cook until meat loses red color.
Stir in asparagus and seasonings, then reduce heat. Pour in eggs and stir gently until eggs are set.
Sprinkle with Parmesan cheese.

I was a bit dissapointed with this recipe. I assumed with the ingredients listed that it would be delicious however it lacked flavor! I did not want to toss out what was left over from this recipe though. The next morning I tossed it back in a skillet, added lots of shredded cheese, warmed it up then put it in a flour tortilla and added salsa and found it much better than the night before.
