The kefta kebab (also known as kofta kebab) is a Middle Eastern dish that consists of grilled ground meat, typically lamb or beef. Serve with rice or flatbread.

1 pound ground lean beef or lamb
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
1 medium onion, grated
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon freshly ground black pepper
1/2 teaspoon salt, or to taste
Combine the meat, parsley, cilantro, onion, cumin, paprika, pepper, and salt in a bowl. Mix well and let stand for 1 hour in the refrigerator.
Preheat the broiler or a grill.
Scoop out the meat mixture in 1/4 cupfuls and form into sausage shapes around skewers. If using wood skewers, soak the skewers in water for 30 minutes before using assembling.
Place the skewers on a broiler rack and broil 4-inches from the heat source. Or grill over medium-high heat. Turn the kebabs frequently to brown on all sides, about 10 minutes or until cooked through.
