ingredients
1 cup uncooked rice
1 cup canned whole kernel corn
salt and pepper to taste
1 can (8 ounce size) tomato sauce
1/2 cup water
1/2 cup chopped onion
1/2 cup chopped green bell pepper
3/4 pound ground beef
4 slices bacon, cut in half
directions
In a 9x13 pan: spread the rice in the bottom. Top with the corn and sprinkle with salt and pepper to taste. Combine the tomato sauce and water and pour over the top. Add the chopped onion and green pepper. Place the meat on top and pat it out evenly. Top with the bacon.
Bake, covered, for 1 hour at 350 degrees F. Remove the cover and bake for 30 minutes longer or until the bacon is crisp.
