ingredients
2 eggs, lightly beaten
1 cup sour cream
1/4 cup flour
1 1/2 tablespoon sugar
1/2 teaspoon salt
1/4 teaspoon baking soda
directions
Preheat griddle and grease, if necessary. Lightly beat eggs and then whisk in remaining ingredients.
Spoon 1 tablespoon of batter onto griddle for each pancake and shape into 2-1/2" rounds. Cook until the top of each pancake is speckled with bubbles and some of the bubbles of popped. Turn and cook until lightly browned on the other side.
Serve immediately with maple syrup or fresh fruit.
