1 cup cottage cheese
6 eggs
1/2 cup all-purpose flour
1/4 teaspoon salt
1 teaspoon sugar
1/4 cup canola oil
1/4 cup milk
1 teaspoon vanilla extract
Combine all the ingredients in a blender. Process for 1 minute. Scrape down the sides of the blender container and then process for another 30 seconds.
Preheat a greased griddle or skillet over medium heat.
Pour the batter onto the griddle using a 1/4 cup measure. Cook the pancakes until lightly browned on the underside and the top is bubbly. Carefully flip the pancakes over and cook until done.
Serve hot.
