Easy Apple Pancakes

ingredients
1 cup whole wheat flour
1 cup white flour
1/2 teaspoon salt
1 tablespoon brown sugar
1 3/4 cup milk
2 eggs
2 apples, peeled and diced
directions
Combine dry ingredients until well mixed. Stir in milk and eggs until completely mixed. Gently stir in apples.
Grease a large skillet and pour batter by spoonfuls to make pancakes. Flip when bubbles appear and bottoms are golden. Serve warm.

Definitely better with 2 tsp baking soda and 1 tsp cinnamon. Also substituted 2 Tbls cream or melted butter for some of the milk

This recipe has no leavening in it, so I added 2 teaspoons of baking soda, and I added a teaspoon of cinnamon for extra flavor. They were really good.

I was in a rush when I decided to make these, so there's a chance I did something wrong, but I'm pretty sure I got the proportions correct. Also, I halved the ingredients for a smaller batch, and used only white flour rather than white and wheat. Whatever I ended up with was really not so good. The texture was just weird/wrong - kind of thick and dense, not fluffy, and the apple didn't seem to do much either. If you end up following this recipe and the pancakes come out good, please post, so that we can assume that I made a mistake and that the recipe is not terrible... :-)
