Brown sugar pancakes are a delicious and easy way to start your day. These pancakes are made with brown sugar, flour, milk, eggs, vanilla and baking powder, and are served with butter and syrup.

2 eggs
3/4 cup brown sugar
2 cups all-purpose flour
1 1/2 cup milk
1 teaspoon vanilla
2 teaspoons butter, melted
3 teaspoons baking powder
1 tablespoon shortening or butter
In a mixing bowl, beat together the eggs and brown sugar on medium speed with an electric mixer.
With the mixer running, alternately add the flour and milk in increments. When mixed, add the vanilla and melted butter.
Fold in the baking powder by hand until well mixed.
Heat a griddle over medium heat and add the shortening. When melted, ladle the pancake batter onto the griddle. Cook until bubbles appear and the pancakes start to look dry. Flip the pancakes over and cook until browned on the bottom.
Serve hot with any desired toppings.

One reason I don't make pancakes more often is that they taste so bland to me. Very dough like. I tried this recipe and was impressed. They are sweeter like I like them and I don't have to drown them in toppings to make them taste good.
