2 cups sifted flour
3 teaspoons baking powder
1/4 cup sugar
1 teaspoon salt
1/2 teaspoon ground cinnamon
1 1/2 cup milk
1/4 cup shortening, melted
2 lightly beaten eggs
1 1/4 cup fresh blueberries
Heat a greased griddle over medium heat.
Combine the flour, baking powder, sugar, salt, and cinnamon in a large bowl. While stirring, add the milk, shortening, and eggs. Mix just until combined. Stir in the blueberries.
Spoon the batter onto the hot griddle to form pancakes. Cook until bubbles begin to form and the underside is lightly browned. Flip the pancakes and cook until done. Serve hot with desired toppings such as syrup, powdered sugar, whipped cream, etc.
