3 eggs
1 cup milk
1 cup sifted all-purpose flour
1/2 teaspoon salt
1 teaspoon sugar
4 tablespoons butter, divided

directions

Combine the eggs, milk, flour, salt, and sugar in a mixing bowl. Mix until smooth.

Heat 1 tablespoon of the butter in an 11-inch frying pan over medium heat. When hot, pour 1/2 to 2/3 cup of the pancake batter into the center of the pan, tilting the pan to spread the batter evenly.

Cook the pancake until bubbles form on top and it starts to look dry. Carefully flip the pancake over and cook until lightly browned on the bottom.

Slip the pancake onto a plate and repeat the process with the remaining butter and pancake batter.

Serve the pancakes with your favorite toppings.
