2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 cups buttermilk
1/2 cup milk
1/4 cup unsalted butter, melted
choice of berries, sliced bananas, raisins or chopped toasted nuts (optional)
oil for griddle
Combine the flour, sugar, baking powder, baking soda and salt in a large bowl.
Lightly beat the eggs with the buttermilk, milk and melted butter.
Just before you are ready to make the pancakes, add the liquid ingredients to the dry ingredients all at once, stirring just long enough to blend. The batter should be slightly lumpy. If you want to add fruit or nuts, stir them in now, or you may sprinkle them on the pancakes while they are on the griddle. Heat a lightly oiled griddle or heavy skillet over medium-high heat (375 degrees F on an electric griddle). Pour 1/4 cup batter per pancake onto the griddle or skillet, spacing the pancakes apart so they do not run together.
When bubbles appear on the surface of the pancakes and the undersides are lightly browned, turn and cook for about 2 minutes longer, until lightly browned on the bottom.
Serve immediately on warmed plates with the topping of your choice.

I've been making these for years!! Couldn't find my printed recipe,thrilled to find this...the only thing I change is I don't add salt and I use salted butter...why mess with a masterpiece!!

I am not a novice when it comes to cooking and baking. Pancakes are one of those things I have been making since I was very little. Today I thought I would find a new recipe, see if there is better out there. I really regret stopping at this one. Honestly, I have never had bad pancakes until I made these. I followed the recipe EXACTLY, even tried to mix it very little so the batter would be lumpy and used my electric griddle set to 375. Nope, it became this liquid soupy mess within 4 stirs with a whisk. There is just too much liquid for this recipe (and I followed the recipe exactly), the milk should have been omitted, and the buttermilk down to 1 & 3/4 cups. I had to add more flour so I didn't make any more puddles on my griddle, which happened when I tried testing this soup of a batter⦠Terrible. omit the milk and use on 1 & 3/4 cups of buttermilk to make this recipe workâ¦

I've made these and they are the only ones I make now. These pancakes are worth the time and effort. I'm not really a big pancake eater, but the first few times I made these I ate more pancakes than I have in my whole life! So wishing I lived near this place in Berkley....

This is far and away the best pancake recipe there is. Barely mix. These are the lightest, fluffiest, most delightfully flavorful pancakes i have ever eaten. Absolutely sinful.
Mine didn't turn out. The batter was much too sticky. Had to spoon it out of the quarter cup onto the griddle. The resulting pancakes were very thick, somewhat sticky. What went wrong? I followed instructions exactly. The buttermilk I used said "low-fat buttermilk" though. By the way I live near Bette's and their pancakes are a hundred times better than these.
That's not really a fair assessment since you just said you had a problem making these. I'm not sure if low fat buttermilk would make them sticky - none of the other reviews mention the batter being sticky.

These are THE BEST buttermilk pancakes EVER! LOVE LOVE LOVE them! Now it's the only pancake I make! I have changed the recipe up a bit by using whole wheat flour, and have also used buckwheat flour! YUM! SSSOOOO fluffy!

This is the best pancake recipe! I have tried so many recipes before and by far this is the lightest and flavorful. I do not use any other pancake recipe except this. I did some substitutions and it still turned out great. For the buttermilk, which we don't often have on hand, I used the poor man's buttermilk (1 cup milk + 1 tablespoon vinegar, let sit for 15 minutes). I add a dash of cinnamon, use a tad less butter, and not over mix! We add fresh blueberries while one side is cooking. Always a hit with my family!

I made this recipe exactly as written and added the optional toasted nuts. I used walnuts and topped with butter and 100% Maple Syrup. My husband and I believe wholeheartedly that these were the best pancakes we have ever eaten.

This is the best pancake recipe I have ever tried. My children absolutley love them. However real buttermilk is a must. I tried substituting buttermilk powder and the texture just wasn't the same.

I've tried a lot of pancake recipes and this one was by far the best. I wanted a simple one that didn't involve whipping the egg separately. This one came out very flavorful, light and delicious even though I only used 3 T butter.

Light and fluffy. I used regular salted butter and I did not notice a salty taste. I added cinnamin and pecans. Definately recommend the recipe.

Tip: do not use salted butter. They were still very tasty but a tad salty. Next time I would definitely use unsalted butter.

What a great pancake recipe! I made it as it called for, with the butter, and there was no need to put butter on them! Light and fluffy with a great flavor - recommend!

I thought This recipie was very good. We changed it around slightly didn't add as much butter. But it was delicious
