Pancakes are just the excuse you need to have beer for breakfast. A bit of brew make these flapjacks fluffy and flavorful. Try different beers - maybe a vanilla porter or spiced holiday ale?
In a large bowl, combine the pancake mix, sugar, cinnamon, and nutmeg.
In another bowl, whisk together the beaten eggs, beer, and oil. While stirring, slowly add the beer mixture to the dry ingredients, stirring just until moistened. Do not overmix.
Heat a greased griddle or skillet over medium heat.
Pour 1/4 cup of batter for each pancake. Cook until bubbles form then flip the pancakes over with a spatula. Cook until lightly browned on the bottom.
Serve the beer pancakes hot with your favorite syrup or toppings.

I researched beer pancakes on several websites before making. I wanted the light and fluffy inside that beer brings to the recipe, but not overpower the pancake flavor. Per another website, I used Coors Light. Instead of the cinnamon and nutmeg, I used apple pie spice. My guests all loved the pancakes and were surprised beer was the secret. Thanks!

Not very flavorful. I think this was just an excuse to add beer to a recipe. It could have been better by adding some additional cinnamon and some vanilla.

The type of beer you use could also make a HUGE difference in the final taste. We wouldn't recommend using a cheap or lite beer.
