Apple Pancakes

ingredients
2 cups biscuit baking mix
1/2 teaspoon cinnamon
1 egg
1 teaspoon real vanilla extract
3 tablespoons brown sugar
1 1/3 cup milk
3/4 cup grated apple
directions
Beat baking mix, cinnamon, sugar, vanilla egg and milk with rotary beater until smooth. Fold in apple.
Pour batter from 1/4 cup measuring cup onto hot greased griddle. Bake until bubbles appear. Turn and bake other side until golden brown.

Thumbs up! My whole family chowed down on these! I was so happy to find a recipe for jazzing up Bisquick with apples and brown sugar. I skinned one big apple and cubed it, then used a mini-prep processor to chop it up - I ended up not using the entire apple. This grated apple gave the pancakes a good, moist texture. I added a little nutmeg, as another reviewer suggested. The batter was a little thin, so I just added a little more bisquik and they were great. I served ours with honey butter and bananas.

I had some extra apples and it was Saturday morning, so I tried this recipe. It was very good... I had tried making up my own recipe before by finely dicing apples, but it didn't cook up as well as I'd hoped. Shredding them makes all the difference! I had some shredded apples leftover after adding the amount in the recipe, so I added them on top of my pancakes with a little sugar free syrup. The combination of textures was fabulous!

These were excellent pancakes. I didn't find the batter thin at all but I used skim milk and not soy so maybe that makes a difference. I also added a little bit of nutmeg and ginger. I would suggest setting your skillet to about 400 degrees for faster cooking too. Yummy

These were fine. While I wouldn't go out to buy apples to make them, I would make them again if I happen to have extra apples in the house. The batter is a little thin, so be sure your griddle is hot enough and use a little less than the 1/4 cup of batter the recipe recommends. I substituted soy milk for the regular milk, which didn't seem to make a difference.
