Not to be confused with the British-style flapjacks, these tender breakfast (pan)cakes are all-American.
1 cup all-purpose flour
1 1/2 teaspoon baking powder
3 tablespoons sugar
1/4 teaspoon salt
1 egg, beaten
2/3 cup milk
1 tablespoon butter or margarine, melted
Sift the flour, baking powder, sugar, and salt together in a bowl. Whisk in the beaten egg then slowly add the milk while stirring until mixed but still somewhat lumpy. Stir in the melted butter.
Grease a griddle or skillet over medium heat. Pour the batter by 1/4 to 1/3 cupfuls onto the hot skillet. Cook, turning once bubbles form on the top, until browned on both sides. Serve the flapjacks hot with butter and syrup, as desired.

Years ago womans day had cook books for sale in grocery stores. They sold books alphebatical from A to Z. The F had a recipe for flap jacks. Every weekend and sleep overs included a breakfast of flap jacks. The recipe I used was 2 cups of flour and double everything else. I am sure this recpipe will make an excellent breakfast. John Lade.

Made these for the kids one weekend - easy & delicious. I might decrease the sugar slightly next time as with syrup they were a tad sweet.

Easy to make and the pancakes were excellent. I substituted oil for the butter.

Excellent! These pancakes are quick, easy, and fun for kids to help out with. Great taste as regular pancakes or add some chopped nuts and chocolate chips and your kids will be begging for more! These pancakes will definately be a favorite here at my house as they are easy and light and fluffy with no waiting around for the batter to lighten up! A+++++!
