Shoestring Potato Salad

Dress up a shrimp, tuna, ham, or chicken salad with crispy shoestring potatoes stirred in.

ingredients
4 stalks celery, sliced thin
1 cup shredded carrots
1/2 small onion, diced
2 cans (6-8 ounce size) shrimp, tuna, ham or chicken, drained
1/2 cup mayonnaise
1/2 cup cream or half and half
1 tablespoon vinegar
1 teaspoon sugar
1 dash celery salt
1 can (2 ounce size) shoestring potatoes
directions
Combine the celery, shredded carrots, onion, shrimp (tuna, ham, or chicken), mayonnaise, cream, vinegar, sugar, and celery salt. Mix well.
The salad can be made up to this point and refrigerated if making ahead of time.
When ready to serve, stir in the shoestring potatoes and serve immediately.
