The key to a good potato salad is to start with a solid, basic recipe. Feel free to add in other ingredients (bacon, jalapenos, sriracha, etc) if desired.
1/4 cup mayonnaise
1/2 teaspoon dry mustard
8 large boiled potatoes, peeled and cut in quarters or cubed
3 hard-boiled eggs, peeled and chopped
1/2 medium onion, chopped coarsely
2 teaspoons capers (optional)
1/4 cup chopped green onion
Combine the mayonnaise and mustard and mix until uniform in color.
Place the potatoes, hard-boiled eggs, onion, and capers in a bowl. Gently stir in the mayonnaise mixture until the potatoes are coated.
Sprinkle the potato salad with the chopped green onion. Cover the bowl and refrigerate for 1 hour or until chilled.
