5 red rose potatoes, skins on
5 hard-boiled eggs, peeled and sliced
1 apple, cored and diced (peeled if desired)
1 cup mayonnaise, plus more if needed
1/4 cup finely chopped onion
1/4 cup sweet relish
1/4 cup spicy brown mustard
1 tablespoon minced fresh dill
salt and pepper, to taste

Bring a large pan of water to boil over high heat. Add the red rose potatoes and cook until fork tender. Remove the potatoes from the water and let cool enough to handle. When the potatoes are cool, cut them into cubes and place in a bowl.

Add the hard boiled eggs, diced apple, mayonnaise, onion, relish, mustard, and dill to the bowl and mix gently. Add salt and pepper to taste and adjust the consistency of the potato salad with more mayonnaise if needed.
