A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.

Not your usual potato salad! This version mimics the famous Waldorf salad by including diced apples, walnuts, celery, and mayo. It also has diced ham to make it a hearty side dish and a perfect addition to your meal.
1 1/2 pound small red potatoes
5 tablespoons cider vinegar
3 tablespoons sugar
1 small onion, chopped
1 teaspoon salt
black pepper, to taste
1 tablespoon sour cream
3 tablespoons mayonnaise
2 ribs celery, finely sliced
3/4 pound ham, diced
1/4 cup chopped walnuts
2 Granny Smith apples, cored & diced
Cook the potatoes in boiling water for 30 minutes or until fork-tender. Drain well. When cool enough to handle, cut the potatoes in half and place in a large bowl.
Meanwhile, in a small saucepan over medium heat, combine the vinegar and sugar. Cook, stirring constantly, until the sugar dissolves. Pour over the potatoes and mix gently.
Add the chopped onion, salt, pepper, sour cream, mayonnaise, celery, ham, and apples to the potatoes. Mix gently to combine.
Serve warm.

Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

A very interesting take on Potato Salad! It's NOT your 'hearty' Potato Salad which one would take to a cookout, but it's DEFINATELY one which I'd serve to my lady friends as a side dish at one of our luncheons. It's right up our alley! Thanks :-)
