Feta Cheese Potato Salad

ingredients
5 pounds red potatoes
1 cup olive oil
1/2 cup white vinegar
2 tablespoons Dijon mustard
1/2 pound crumbled feta cheese
1 bunch green onions, chopped
5 1/2 cups celery, chopped
1/4 cup black olives, sliced
salt and pepper, to taste
directions
Wash the potatoes well and cut into 1/2 inch cubes. Boil them in lightly salted water for 15-20 minutes. Drain and cool.
Mix the oil, vinegar and mustard. Add the potatoes and stir gently. Mix in the feta, green onions and celery. Salt and pepper to taste. Serve.
