Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.
Asian Potato Salad

ingredients
10 medium red potatoes
1 cup mayonnaise
2 tablespoons red wine vinegar
1 tablespoon soy sauce
2 teaspoons sugar
1 teaspoon salt
1/4 teaspoon sesame oil
2 cups chopped snap peas
1 can (8 ounce size) sliced water chestnuts, drained
3 stalks celery, chopped
3 green onions, chopped (green part only)
1/4 medium red onion, chopped
directions
Scrub potatoes and remove any blemishes. Pierce each potato several times with a fork. Microwave on HIGH for 10 to 12 minutes until cooked through but still firm. Set aside to cool.
In a medium bowl, whisk together mayonnaise, red wine vinegar, soy sauce, sugar, salt and sesame oil. Mix in snap peas, water chestnuts, celery, green onion and red onion.
Cut potatoes into 1-inch pieces, toss with mayonnaise mixture. Refrigerate until ready to serve.
