Taco Soup

ingredients

2 pounds ground beef
1 large onion, chopped
1 can (28 ounce size) diced tomatoes
1 can (16 ounce size) pinto beans, undrained
1 can (16 ounce size) black beans, undrained
1 envelope dry ranch salad dressing mix
1 can (10 ounce size) Rotel or Old El Paso tomatoes with chiles
1 can (16 ounce size) kidney beans, undrained
2 cans (7 ounce size) white shoepeg corn, undrained
2 envelopes taco seasoning mix
finely shredded taco cheese
tortilla chips, crushed

directions

Brown meat and onions. Add remaining ingredients, except cheese and chips. If soup seems too thick, add 1 cup water.

Simmer, covered for 30 to 45 minutes. Spoon into bowls.

Sprinkle cheese and chips on top. Serve while hot.

    My husband requests this soup about once a week. He never gets tired of it! I use low sodium ingredients and just add my own salt to taste. I've also made this with ground sausage when I didn't have any beef on hand and it was also good (have to drain the meat a bit more so it isn't greasy).
