Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.


Guinness along with some seasonings makes one of the best shredded beef sandwiches you'll ever try.
1 medium white onion, sliced
1 medium red onion, sliced
3 pounds boneless chuck roast
1 1/2 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
3 teaspoons minced garlic
1 cup ketchup
1/4 cup Worcestershire sauce
2 tablespoons cider vinegar
1 teaspoon dried oregano
1 teaspoon dried basil
2 cups Guinness beer
1/2 cup cold water
3 tablespoons cornstarch
Preheat the oven to 325 degrees F.
Place the onions in the bottom of a Dutch oven or other oven-proof dish with a cover. Place the chuck roast on top of the onions. Sprinkle the roast with the salt, pepper, and minced garlic.
In a bowl, whisk together the ketchup, vinegar, Worcestershire sauce, oregano, and basil. While slowly stirring, add the Guinness. Pour the mixture evenly over the chuck roast.
Cover the pot and place in the oven. Let cook at 325 degrees F for 2 1/2 hours or until the meat is tender and falling apart.
Remove the pan from the oven and transfer the roast to a platter or cutting board.
Let the liquid in the Dutch oven cool then transfer it and the onions to a blender. Puree until almost smooth. Return the mixture to the Dutch oven.
Combine the cold water and cornstarch in a small bowl. Stir into the liquid in the Dutch oven. Place the pan over medium heat and cook, stirring constantly, until the sauce thickens, about 10 minutes.
Shred the beef and return to the pan. Serve on buns with any desired toppings. Or, slice the meat and serve drizzled with the sauce.
Adjust the seasoning of the sauce before serving as the long cooking time can mellow the flavors.
If the sauce is too thin, continue to simmer it uncovered to reduce and thicken.
For a smokier flavor, add a touch of liquid smoke to the sauce.
Toast the buns before assembling the sandwiches for more flavor.
Try different beers to change the flavor of the dish.
To save time, prepare the beef and sauce ahead of time and reheat when ready to serve.
Chuck roast is best for this recipe, as it becomes tender and flavorful when cooked slowly. You can also try rump roast, shoulder roast, or top round. You need a cut that needs low and slow cooking.
While Guinness is the star of this recipe, you can use any dark beer of your choice for a similar result.
Fresh herbs can be used. You'll need three times the amount of dried - so for this recipe you'll use 3 teaspoons fresh minced oregano and 3 teaspoons fresh minced basil in place of their dried counterparts.
You can cook this recipe in a slow cooker on low for 4-6 hours or high for 2-3 hours until the meat is tender.
Store any leftover beef and sauce in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stove or in the microwave.
You can freeze the cooked beef in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Soft hamburger buns or brioche buns work well for serving the sandwiches.
To reheat the beef without drying it out, add a bit of beef broth or water to the meat before reheating.
Toppings like coleslaw, pickles, sliced onions, or even melted cheese all work great.
