Are you getting the family together for a big weekend? This big-batch recipe for barbecue beef sandwiches is delicious and can serve up to 50 people (you can scale it down for smaller groups too, of course!)
12 pounds beef briskets, trimmed
6 cups barbecue sauce
2 cups water
50 hamburger buns
Preheat the oven to 325 degrees F.
Place the beef briskets in a roasting pan, cutting to fit them if needed.
Combine the barbecue sauce and water and mix well. Pour the barbecue sauce mixture evenly over the beef.
Cover the roasting pan tightly with foil. Place the beef briskets in the oven and bake at 325 degrees F for 4 to 4 1/2 hours or until the beef is tender.
Remove the meat from the roasting pan and place on a platter. Tent the beef lightly with foil and let the beef rest for 15 minutes.
Skim any fat from the juices in the roasting pan.
Slice the beef thin and return it to the juices in the pan. Stir to coat the beef in the sauce.
Serve the barbecued beef on buns.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
