ingredients

2 pounds firm white fish fillets
lemon juice
1 large onion, minced
20 green olives, diced
3 tomatoes, peeled, seeded and diced
1 cup tomato juice
1/2 cup water
1/2 cup ketchup
1/2 cup olive oil
2 teaspoons salt
1 teaspoon oregano
1 teaspoon bottled hot sauce
1 teaspoon garlic salt

directions

Cut fillets into bite-size cubes. Marinate for 8 hours in lemon juice (The lemon juice "cooks" the fish).

Drain and rinse in cold water. Add remaining ingredients.

Garnish with tomatoes. Serve with crackers.
