Make room on the table for Reuben cocktail bites, the snack that turns your favorite sandwich into a party-perfect treat. Warm, tangy, and utterly dip-able, they're a crowd-pleaser.

serves/makes:

ready in:
  under 30 minutes

ingredients

1 pound pizza dough
8 ounces corned beef, chopped (canned or cooked)
8 ounces shredded Swiss cheese
1 1/2 cup Krrrrisp Kraut or Silver Floss sauerkraut
Thousand Island salad dressing, as needed

directions

Preheat the oven to 400 degrees F.

Roll the pizza dough out to a rectangle that is 16x6-inches.

Sprinkle the dough with the corned beef, leaving a 1/2-inch border around the edge of the dough free from ingredients.

Cover the corned beef with Swiss cheese. Drain the sauerkraut well then evenly spread it over the Swiss cheese.

Roll the pizza dough up lengthwise. Slice the dough with a sharp knife into 3/4-inch slices. Place the Reuben dough rolls on a baking sheet in a single layer, so the rolls are touching.

Place the baking sheet in the oven and bake the Reuben cocktail bites at 400 degrees F for 15 minutes or until the dough begins to brown.

Remove the corned beef appetizers from the oven and let cool for 5 minutes on the baking sheet. Remove them from the baking sheet and serve warm with Thousand island dressing on the side for dipping.

recipe tips

Get creative with the fillings by adding chopped pickles, diced onions, or a sprinkle of paprika.

Brush the dough with a beaten egg before baking for a shiny, golden finish.

If the dough becomes sticky while rolling, dust with a little flour to prevent sticking.

Don't overfill the dough to prevent the filling from leaking out during baking.

To reheat leftovers, place them in a 350 degrees F oven for a few minutes until warmed through and crispy again.

Try adding a touch of horseradish to the Thousand Island dressing for an extra zing.

common recipe questions

Do I use store-bought pizza dough or homemade?

You can use either. They will have slightly different textures but both will work just fine.

Can I make these bites ahead of time?

You can assemble the Reuben cocktail bites ahead of time and store them in the refrigerator until you're ready to bake them. This can be a time-saver for party planning.

How should I store leftovers?

Store any leftover Reuben cocktail bites in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven to restore their crispiness.

Can I freeze these appetizers?

While it's best to enjoy these bites fresh, you can freeze unbaked Reuben cocktail bites on a baking sheet until solid, then transfer to a freezer bag. Bake from frozen as needed.
