Tangy Cornbread Appetizers

ingredients
1 package cornbread muffin mix
1 egg, beaten
1/4 cup milk
3 tablespoons bacon bits
2 tablespoons Dijon or spicy mustard
1 tablespoon dried parsley flakes
sour cream
directions
Combine corn muffin mix, egg, milk, bacon bits, mustard, and parsley in a medium mixing bowl. Stir until just barely moistened. Spread the batter evenly into a greased 2-quart rectangular baking dish.
Bake in a 350 degrees F oven about 15 minutes or until a toothpick inserted in the center comes out clean. Cool slightly on a rack.
Cut into small squares. Top each square with a small dollop of sour cream.
