These delicious corned beef canapes are perfect for your next party. The cheesy, meaty topping is irresistible. Your guests will love these bite-sized snacks.

3/4 pound freshly grated sharp Cheddar cheese
1 can (12 ounce size) corned beef, chopped
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 clove garlic, chopped
1/2 cup finely chopped onion
1 tablespoon finely chopped green onion
2 tablespoons diced pimiento
mayonnaise, as needed
1 package (16 ounce size) cocktail rye bread rounds
Preheat the oven broiler.
Combine the cheese, corned beef, Dijon, Worcestershire, garlic, onion, green onion, and pimiento in a bowl. Mix well. Add mayonnaise as needed to make a creamy spread.
Spread the corned beef mixture on the cocktail rye slices. Place the canapes in a single layer on a baking sheet.
Place the canapes under the broiler and cook just until the cheese melts.
Remove the corned beef canapes from the oven and serve warm.

I used leftover corned beef from st patricks day instead of the canned stuff. It was really great - we had it as a snack while watching a movie on family night. If you wanted to serve it for a St Patrick's day party you could sub the mustard, mayo and w-sauce for thousand island dressing and use swiss cheese, and sub sauerkraut for the onion. Yumm I might have to make more corned beef just so I can try that!
