Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.


1/2 package (16 ounce size) smoked sausage, sliced and drained
1 package (16 ounce size) frozen black-eyed peas
3 cups water
2 large beef bouillon cubes
1 medium onion, chopped
Saute sausage in a large skillet over medium-high heat until browned. Drain sausage and return to skillet. Add peas and remaining ingredients, bring to boil. Reduce heat, and simmer 30 minutes or until tender.
Note: Can use fresh black-eyed peas. You will have to cook them about 10 more minutes, but they are well worth the wait.
