A great warm weather cocktail. Fresh pineapple is best in this but canned will work just fine too.


1/2 ripe banana, peeled
1/2 cup fresh or canned pineapple chunks
1/2 cup rum, or pineapple juice for a non-alcoholic version
1/2 cup ice cubes
1/4 teaspoon coconut extract
1 tablespoon sugar
Combine the banana, pineapple, rum, ice cubes, coconut extract, and sugar in a blender. Process until smooth. Pour into tall glasses and serve immediately.
